Ingredients

  • 1 cup of freshly rubbed arugula
  • cherry tomatoes, 1 / 2 pound
  • 1 / 4 cup roasted tomatoes
  • 1/4 cup of stracciatella cheese
  • 1 tbsp. chopped pistachios
  • 2 tbsp. fruity glaze
  • 2 tbsp. extra virgin olive oil ( EVOO )
  • 1/4 tsp. dried Roman spices like basil, oregano, and parsley
  • 2 tbsp. sauce for pizza
  • Choice of pasta, Roman homemade, or focaccia

Directions

Preheat oven to 400°F. Toss cherry tomatoes with 1 tbsp. Depending on your desired texture and degree of roasting, spread the EVOO and Italian spices consistently on a small sheet pan. Allow tomatoes to cool to room temperature before chilling in a covered container for one to two hours.

Spread the arugula uniformly across a platter. Topped with a dollop of stracciatella cheese and pesto, chilled roasted tomatoes, and a few dollops of stracciatella. Pistachios are rubbed in with fruity glaze and EVOO, and then topped with pistachios. Serve with your choice of bread.
